docs: Homebrew tap is live (brew install riskkernel) - #148

The prashar32/homebrew-riskkernel tap is now published with the current formula, so brew install works. Make it a first-class install path in the README, update docs/HOMEBREW.md (the tap exists; future updates are hands-free with the HOMEBREW_TAP_TOKEN secret or a manual formula push), and note it in the changelog.
